Watermelon Mojito

A refreshing twist on the classic mojito with fresh watermelon, lime, mint, and rum, perfect for summer sipping.

Ingredients
  

  • 2 ounces white rum
  • 1 ounce fresh lime juice
  • 1 ounce simple syrup (or to taste)
  • 1 cup fresh watermelon, cubed
  • 8-10 fresh mint leaves
  • Club soda, to top
  • Ice

Method
 

  1. In a shaker or sturdy glass, muddle the watermelon and mint leaves until the watermelon releases its juice and the mint is fragrant.
  2. Add rum, lime juice, and simple syrup. Fill the shaker with ice and shake briefly to combine.
  3. Strain into a tall glass filled with ice. If you prefer a chunkier drink, you can skip straining and pour everything in.
  4. Top with club soda and give it a gentle stir.
  5. Garnish with a small wedge of watermelon and a sprig of mint.

Notes

  • Fresh watermelon works best, but if it’s not in season, you can use cold-pressed watermelon juice for convenience.
  • Adjust sweetness with more or less simple syrup depending on how ripe your watermelon is.
  • Light rum keeps the drink crisp, but a lightly aged rum can add a touch more depth.
