Method
- In a shaker or sturdy glass, muddle the watermelon and mint leaves until the watermelon releases its juice and the mint is fragrant.
- Add rum, lime juice, and simple syrup. Fill the shaker with ice and shake briefly to combine.
- Strain into a tall glass filled with ice. If you prefer a chunkier drink, you can skip straining and pour everything in.
- Top with club soda and give it a gentle stir.
- Garnish with a small wedge of watermelon and a sprig of mint.
Notes
- Fresh watermelon works best, but if it’s not in season, you can use cold-pressed watermelon juice for convenience.
- Adjust sweetness with more or less simple syrup depending on how ripe your watermelon is.
- Light rum keeps the drink crisp, but a lightly aged rum can add a touch more depth.
